Its appearance is notably different from that of other agaves. This agave has a long maturation period, ranging from 13 to 15 years, which contributes to a complex and deep flavour profile in mezcal. 
All this time allows it to develop a higher concentration of sugars and aromatic compounds, which are reflected in the final product, offering delicious and sophisticated notes in the mezcal.
